What works and what does not work for infantry? Personally I believe that infantry are best used to hold territory, especially foot infantry. The attack is virtually impossible for foot infantry.
In a forest or city, any terrain that restricts LOS and mobility, infantry are at their best vs. armored units. They will take high casualties once discovered, but if you can lay an effective ambush small bands of well-equipped infantry (SRM and laser especially) can definitely pick off a careless 'mechwarrior. If the infantry have time to prepare the ambush with mines and other goodies they definitely have a good shot of winning.
Battlearmor and, to a lesser extent, jump infantry, are a different matter; especially when deployed in an APC (not bad), IFV (even better), or riding on a 'mech (best of all). I imagine that most Hell's Horses omnimechs go into battle carrying five elementals on their shoulders. A fast 'mech can easily deposit a point of elementals behind an enemy's position. Battlefield transport is also necessary in order to prevent attacking infantry from being cut off by enemy counter-attacks. Even battlearmor can be reduced in fairly short order by a mobile foe armed with LRMs.

You summed it up already. They are to hold ground, and defend set postions. Dug in and having support weapons.
Not much else they can do in this game since any weapon on a mech will kill them in droves with a single shot.
Battlearmor can take on mechs and vehicles and give as good as they take. But even they have limits and some times it's better for them to play hit and run then to slug it out.
The specialist infantry, ie jump and anti-mech, are purpose used. By that I mean you KNOW you have the enemy where you want them and you have the reasources to use these troops to their fullest. Other wise trying to use them out in the open and fluid battlefield is a waste.

Infantry and BA really shine when using the hidden units rules. I've seen grown men tremble with fear when they realize that their precious heatmonger Mech who's trying to cool off just went adjacent to several platoons of SRM infantry. And I tore apart a Clan Cauldron Borne with just one squad of Fa Shih power armor by striking from a concealed position. (And following up on the next round with a nice swarm attack.)
